Carole is a highly qualified and experienced clinical nutritionist and medical herbalist, and one of the UK’s leading experts on health issues related to gluten. She has helped thousands of patients recover from a wide range of disorders, and has found gluten intolerance to be a key factor in many cases.
Carole previously worked as a diet and fitness coach. She changed direction in life in 1994 after developing debilitating health problems including IBS, chronic fatigue syndrome and constant migraines, to which western orthodox medicine was unable to find a solution. Carole’s rigorous degree in Western Herbal Medicine included over 500 hours of clinical training and helped her develop a deep understanding of the journey from ill health to wellbeing.
Carole subsequently undertook university masters level training in immunology and nutrition, individualised nutrition, clinical nutrition and live blood analysis. She uses functional and metabolic testing as well as live blood auditing and orthodox blood tests to assess her patients. She now teaches, lectures and advises on the concepts of nutritional individuality, specialising in health promotion and disease prevention and is passionate about helping the food industry design healthier food and drinks.
Carole’s daughter Chantal is a chef who specialises in gluten and dairy free cooking. She has been gluten free herself since her early twenties, when the health problems caused by reactions to gluten became intolerable. Her two children have coeliac disease, which has led to her developing a particular interest in foods which are not only gluten free, but delicious and health promoting.
As well as consulting for restaurants and food chains, Chantal works as a gluten free/ dairy free/ allergen free private chef. She can meet all your catering needs, including dinner parties, children’s parties, cookery lessons, baking, corporate cooking days and much more.
